My brother and I had the chance to visit the Chiang Mai & Chiang Rai regions in northern Thailand.

We visited several coffee farms and joined multiple cuppings. This coffee from Hillkoff really stood out.

Chiang Dao sits in the mountainous heart of Northern Thailand, part of a coffee region with one of the most fascinating transformation stories in specialty coffee.

At 1,300 meters above sea level, these limestone mountains create ideal growing conditions - cool temperatures, rich soils, and that special microclimate that gives the beans their distinctive character. But what makes this region truly special is its story of renewal.

These mountains were once part of the Golden Triangle, where opium dominated the landscape. In the late 1960s, King Bhumibol Adulyadej introduced a revolutionary idea: replace opium with coffee. He distributed arabica seedlings and supported local hill tribe communities with training and resources, transforming both the land and the lives of farmers.

Today, Chiang Dao's coffee comes from small, family-run farms where every cherry is hand-picked at perfect ripeness. The farmers here practice sustainable agriculture, using shade trees and organic methods that preserve the mountain forests and water sources. It's coffee cultivation as environmental stewardship.

What you taste in this cup isn't just exceptional coffee - it's the result of decades of transformation, community resilience, and the unique terroir of these remarkable mountains.
