Discovery
My brother and I had the chance to visit the Chiang Mai & Chiang Rai regions in northern Thailand.
We visited several coffee farms and joined multiple cuppings. This honey-processed coffee from Hillkoff caught our attention immediately.
The bright, sugary sweetness and those distinctive banana leaf notes made this one unforgettable. It became our go-to for lighter, more delicate brewing methods.

At 1,300 meters above sea level, this district offers ideal conditions for arabica cultivation - cool mountain air, rich volcanic soils, and the kind of terroir that brings out unique flavor characteristics you won't find anywhere else.
The area shares the same transformation story as neighboring regions, where coffee replaced opium crops in the 1960s and 70s through royal agricultural programs. Today, Samoeng's small family farms continue this legacy of sustainable mountain agriculture.
